Waldorf salad (W3)

Der dt. "Waldorfsalat", engl. "Waldorf salad", wurde nach dem Hotel "Waldorf-Astoria" in New York benannt, wo er im Jahr 1896 kreiert wurde, bzw. im "The Cook Book, Oscar Tschirky (of the Waldorf)" zu finden war. Dort bestand diese Salatvariante aus rohem, geraspeltem Sellerie, Äpfeln, Walnüssen und Mayonnaise.

In deutschen Texten wird der Standort (ein Wort, zu dem ich irgendwann mal ausführlich Stellung nehmen möchte) gern zum Synonym umfunktioniert.

Zum Beispiel: Wenn man das wörtlich ins Englische rüberschaufelt, kommt ein Salat dabei raus. Besonders wenn es um internationale Unternehmen und internationale Zielgruppen geht, wirkt the Walldorfers und selbst the Stuttgarters recht eigenartig bis provinziell. Haben die denn keine anderen Standorte? Nur Mitarbeiter aus dem Umland?

Waldorf Salad ... The dish was supposedly created by maitre d'hotel Oscar Tschirky of the Waldorf-Astoria Hotel in New York City, which opened in 1893. By 1896, when Tschirky compiled "The Cook Book by 'Oscar of the Waldorf'", the recipe - given without comment - called for only apples, celery, and mayonnaise, and the salad later became a staple item in most hotel dining rooms and other restaurants. At some point in the next two decades chopped walnuts were added, for they are listed by George Rector in the ingredients for the salad in "The Rector Cook Book", which appeared in 1928, after which walnuts became standard in the recipe, including the one give in the "Waldorf-Astoria Cookbook" [1981], by Ted James and Rosalind Cole.

This American classic first was introduced at the old Waldorf Hotel in New York. Oddly, it was an off-the-cuff creation by the maitre d'hotel, Oscar Tschirky, rather than an inspiration of the chef.

Waldorf salad

Peel two raw apples and cut them into small pieces, say about half and inch square, also cut some celery the same way, and mix it with the apple. Be very careful not to let any seeds of the apples be mixed with it. The salad must be dressed with a good mayonnaise.

Oscar Michel Tschirky (* 28. September 1866 in Le Locle; † 6. November 1950 in New Paltz, New York) war Maître d’hôtel im Waldorf-Astoria-Hotel in Manhattan.

Leben

Oscar Tschirkys Vater kam aus Weisstannen (Gemeinde Mels) und war Agent in einem Reisebüro in La Chaux-de-Fonds, seine Mutter stammte aus Luzern. Oscar besuchte zuerst die Schule in La Chaux-de-Fonds, später wurde er von seinem Vater zusammen mit seinem zehn Jahre älteren Bruder Brutus zu einem Bauern nach Fribourg geschickt.

1890, kurz vor der Eröffnung des ersten Waldorf-Hotels, bewarb sich Tschirky beim zukünftigen Direktor George Boldt um den Posten eines Maître d’hôtel und wurde 1891 auf Empfehlung zahlreicher Prominenter eingestellt. Mit einem monatlichen Gehalt von 250 Dollar begann Tschirky seine neue Stelle im zuerst noch unfertigen Hotel Waldorf, das mit seinen 450 Zimmern, 350 Bädern, Sälen und Restaurants und Bars am 13. März 1893 in einer großen Gala mit 2000 Gästen eröffnet wurde – organisiert von Oscar Tschirky.

Oscar Tschirky veranstaltete extravagante Anlässe mit exquisiten Menüs und hervorragendem Service. Industriellen, Showstars, Politikern, Staatsgästen und Musikern bot Tschirky im Waldorf eine Bühne für ihre Feste. Mit «Oscar of the Waldorf», wie Tschirky nun offiziell genannt wurde, bekannt zu sein und im Waldorf zu speisen, galt als Auszeichnung. Angesprochen wurde er mit «Oscar».

"Waldorf-Astoria" 1899

Der Erfolg des "Waldorf" war so groß, dass John Jacob Astor IV neben dem Waldorf ein weiteres Hotel plante. 1897 wurde das "Astoria" eröffnet, das mit seinen 17 Stockwerken und seinem Ballsaal für 1500 Gäste noch luxuriöser war als das "Waldorf". Beide Gebäude wurden zum "Waldorf-Astoria" vereint, dem «besten Hotel der Welt» mit über 1000 Zimmern.

Auf Tschirky gehen unter anderem das «Kalbfleisch Oscar» und der Waldorfsalat zurück. 1896 erschien sein Kochbuch The Cook Book By «Oscar» Of The Waldorf. Zur Erinnerung an Oscar Tschirky ist im Waldorf-Astoria das Restaurant «Oscar’s at the Waldorf Astoria» benannt.

Oscar Tschirkys Nachlass und seine Sammlung mit mehr als 10.000 Menüs wird von der Cornell University verwaltet.
